For the crust: 1/2 cup of pitted dates, soaked in water for 10 minutes and drained, 1 cup raw almonds or walnuts, 1/2 cup of cashew nuts (soaked overnight and drained).
Method: Add dates and nuts to Vitamix and blend until the mixture is smooth. Transfer into a pie dish.
For the filling: 1&1/2 cups raw cashew nuts (soaked overnight and drained), 1/2 cup of full fat coconut milk, 1/4 cup of lemon juice, 1/2 cup or less of pitted dates (soaked in hot water for 5 minutes and drained, 1/3 cup of melted coconut oil, 2 tablespoons almond butter. Option: 2 tablespoons maple syrup if you want the filling sweeter.
Method: Blend cashew nuts, coconut milk (the creamy part not the liquid), lemon juice, dates, coconut oil until smooth. Remove from blender and spoon in the almond butter. Smooth mixture on top of crust. Decorate with strawberries and blueberries or your favourite fruit.
Freeze for 5 hours. Serve frozen or let it soften for 10 minutes before serving.
