The last time I pan fried kale, it proved a huge disappointment. Kale is known for being bitter and unpalatable especially as a solitaire. Combining cool, light, crispy lettuce with warm, pan fried kale ended up being a most pleasant relationship. Home grown tomatoes add colour to this delightfully simple salad.
1 bunch of kale, thinly sliced
1 teaspoon coconut oil
1 head of lettuce, thinly sliced
Danka's Maple Syrup Vinaigrette
6 or 7 tiny tomatoes
Toss kale quickly in hot coconut oil for 5 seconds.
Combine lettuce and kale in a salad bowl with Danka's vinaigrette. Add the tomatoes.
