Tosca red wine vinegar - the best I have tried, the taste is rich without being too tart.
Maple syrup
Salt and Pepper
3 cloves of garlic, minced
Juice of half a lemon
In a large, circular bowl, create rings of the following. The largest ring first of olive oil. A smaller ring of Tosca red wine vinegar, and yet a smaller ring of maple syrup. Add salt and pepper, and the garlic, together with the lemon juice. Take a small wire whisk and blend the mixture for 10 seconds. Season to taste.

Thank you thank you thank you for posting this, it's my fav!! But now you're giving away your secrets... I wonder if you will release a vegan-version of your date squares one day.
ReplyDeleteThe date squares, Wanda! Now that I am 'back home' and hauling out my recipes and books which have been starved of affection all these years, I might just find that recipe. Of course, I could shoot a note to June in Ireland and see if she still has it. I used to make them in Durban and the year was.....1985. Seems a whole world away in space and time.
