Going Lentilistic


Organic sprouting lentils
Lentils are a thing of great beauty. They're rich in protein and starch, providing a good source of vitamins and minerals. They are easy to sprout, and for those who cook, they combine well into soups, patties and unique dishes standing totally on their own. I've gone slightly lentilistic - a day is not a day without lentils. I just recently discovered Beluga Lentils - tiny, black lentils which when sprouted look like caviar with tails.

When soaked, lentils expand, thus half a cup will go a long way. 

Preparing lentils: scoop up half a cup of lentils. Spread on a plate and pick out tiny pebbles.
Rinse lentils in a sieve.

Sprouting lentils: soak lentils in a jar of water, overnight. Pour water out, rinse with fresh water, invert sprouting jar and keep rinsing at least twice a day with fresh water for the next few days. Sprouts are highly nutritious. Raw is a cult which the body appreciates.
